Pasta and Beef Salad

Serves 8

Ingredients
  • 1 pound Orzo, Small Shells or other small pasta shape, uncooked
  • 2 cups roast beef from the deli, cubed
  • 3 medium ripe tomatoes, chopped
  • 1 cup chopped zucchini
  • 1 cup chopped fresh parsley
  • 1/2 cup finely chopped green onion
  • 2 tbsp. minced fresh mint
  • 3 cloves garlic, minced
  • 1/2 cup lemon juice
  • 2 tbsp. olive or vegetable oil
  • 1 tsp. black pepper
  • Salt to taste
Directions

Prepare pasta according to package directions. Drain and rinse under cold water; drain again. In a large mixing bowl, combine pasta, beef, tomatoes, zucchini, parsley, onion and mint. In a small mixing bowl, combine remaining ingredients; whisk well. Toss dressing with pasta mixture. Salt to taste. Serve immediately or refrigerate until ready to serve.
