Carolina Chicken BBQ Sandwiches

Serves 4

Ingredients
  • 2 cups cooked PERDUE® OVEN STUFFER® Roaster chicken from Grilled Dry-Rubbed Chicken with Cool & Creamy Salsa, shredded
  • ½ cup bottled hickory-flavored barbecue sauce
  • 2 tablespoons orange juice concentrate
  • ¾ cup water
  • 1 tablespoon Dijon mustard
  • 4 Kaiser or hamburger rolls, sliced
  • 1 cup prepared coleslaw
Directions

In saucepan, combine chicken, barbecue sauce, orange juice concentrate, water and mustard over medium-high heat. When mixture begins to bubble, reduce heat to simmer and cook for 5-8 minutes (until mixture is heated through).

Remove chicken from heat. Divide evenly among 4 rolls. Top each with ¼ cup of coleslaw. Cover sandwiches with top of roll and serve immediately
