Bistro Chicken Baguettes

Serves 4

Ingredients
  • 4 5-inch pieces of baguette or other crusty rolls, sliced
  • 8 tablespoons goat cheese*
  • 1 (6 ounce) jar marinated artichoke hearts, sliced
  • ½ cup roasted red pepper slices
  • 1 (10 ounce) package PERDUE® SHORT CUTS® Fully Cooked Carved Chicken Breast, Italian style
  • ¼ cup sliced olives
  • 1 cup fresh spinach, washed and dried
Directions

Spread each side of the bread with 1 tablespoon of goat cheese. On one side of each sandwich, divide artichoke hearts, red peppers, chicken strips, olives and spinach. Place tops onto sandwiches and secure with toothpicks, if necessary. Slice in half, serve.

*May substitute 8 tablespoons any soft crumbled cheese such as feta or blue cheese
