Ingredients
Slice of lox, diced
½ small onion, chopped
America’s Choice® Margarine
Pinch of pepper
2 large America’s Choice® eggs, beaten
Directions
Sauté lox and onion with margarine in a pan over low flame until onions are soft and translucent and lox is thoroughly cooked. Sprinkle with pepper. Next, pour beaten eggs over mixture, but do not stir. Allow to simmer. When the bottom is firm, flip omelet over and cook the other side for a minute until eggs appear solid. Serve alone or pair with a toasted bagel for a delicious breakfast sandwich.
